Color management truly can NOT be disabled, even in QuarkXPress. It pays to learn about the "behavior" of this application even if we don't intend to use its more grandiose color management capabilities (for example: a full RGB layout being converted on-the-fly to CMYK at print time).
What are the pros and cons of this stalwart page layout application in the color management arena? How can we just get QuarkXPress to show us something accurately on-screen without fully enabling CMYK conversions at print time that might, in turn, mess things up down the line?
